Kale & Rocket Salad

This is a favourite salad of mine. Before going Vegan I loved Honey & Mustard dressing. So pleased I discovered Agave. The quantities are approximate. So just adjust for personal taste.

Serves 

1 cup Kale chopped finely 1/2 Cup Rocket 2 Spring onion 4 Baby tomatoes 8 slices of Cucumber chopped Red and yellow baby sweet peppers sliced 1 dessert spoon Pumpkin seeds 1 dessert spoon Sunflower seeds 1 tbsp Milled linseed 1 tbsp Shelled hemp seeds

Agave & mustard dressing:

1 tbsp cider vinegar 2 tbsp Agave or Maple Syrup 1/2 tsp wholegrain mustard 

Method:

Simply combine all salad ingredients and mix well. Then mix the dressing and add to your salad and mix!
